The salt fields of Kampot benefit from privileged meteorological conditions during the dry season from January to April, to produce a natural flower of salt of high quality appreciated by the chefs and the gourmets. Along the river between the sea and the town of Kampot, the water is channeled and filtered in a succession of ponds. Crystals of Flower of Salt form with heat and evaporation. They float for an ephemeral duration on the surface of the water and are collected with a dedicated tool at a specific time before they sink to the bottom of the basin. Each salt basin produces a tiny amount of Flower of Salt only when it is warm, sunny weather and with very little wind. Once harvested, Flower of Salt is sun-dried for several days.
